I ♥ Southern cooking. I love fried chicken, country fried steak, collard greens, succotash, black eyed peas, okra, boiled peanuts, grits... I just can't help it. It's my favorite type of food to eat, mostly because its what I grew up eating.
I remember when we moved out west my hubby and I were in Las Vegas and we asked for sweet tea, the waitress looked at us like we had four eyes. Seriously! She had no idea what we were talking about "Toto, I have a feeling we're not in Kansas anymore."
I am getting to my point. Southern cooking is having a spike in "trendiness" from NYC to Chicago to LA people are on the "grit"wagon and its moving fast. This month Bon Appetit's whole issue is dedicated to southern cooking. The recipes in here are TO DIE FOR! Check out this pan skillet-fried chicken...Yummy....Get this months Bon Appetit. Its worth every penny.

My kids and I LOVE pancakes. We make pancakes or waffles at least once on the weekends together. I always sneak in a something healthy just because I can...and it makes me feel like a better Mom.
Here's an easy way....ADD Banana into either your pancakes or your waffles.
Make your batter as instructed, add 1/2 of a banana, 1 teaspoon of brown sugar, 1 teaspoon of cinnamon and blend into batter with hand mixer.
I prefer Pamela's Gluten Free Baking and Pancake Mix. We are NOT a gluten free family but I gotta tell ya...I have tried lots and lots of pancake mix and this one rocks. Even my hubby (who grew up on Bisquick) loves it.
Not into banana? Add blueberries, apple sauce or strawberries instead.
Easy, breezy, Sunday Morning...The kiddos love to help and eat too.

Apples remind me of Fall...My mom use to make us baked apples (on the stove) all the time growing up for dinner and I have always loved them.
I had this idea but couldn't quite find the right recipe so I made this up and I think they turned out great . These would be a great side for Thanksgiving and the best thing is you could make them the day before and then cook the day of....

National Smores Day!

Did you know that today is National Smores Day?
I didn't either until I saw a post over at Celebrations at Home.
We are at the beach and have been making a lot of smores lately.
My daughter Lily actually spotted these
Jumbo Marshmellows at Target the other day.
They are so much fun!
They're huge and they make the best smores.

It pairs perfect with rice, gravy, chicken or pork chops.
2 c. fresh or frozen corn (cooked)
2 c. lima or shell beans (cooked)
1/4 tsp. salt
1/4 tsp. pepper
2 tablespoons butter
2 c. lima or shell beans (cooked)

1/4 cup whipping cream
Heat Corn and Lima Beans.
Season with salt and pepper, butter and cream.
All Done! Yummy!

Summer Dessert: Grilled Peaches!

This is so easy and so yummy! My hubby loved them.
Get some summer peaches. Cut in half and pit. Sprinkle some cinnamon, nutmeg and a little sea salt on them and pop them on the grill until they are soft.
I used my new Grill Pan that I am a huge fan of because I don't have to be outside in the 120 degrees heat all summer and can still get the same effect as my grill.
You could add some ice cream to your peaches too!

Oh My Gosh!
I am bored with cooking dinner and
I am bored with this extra post baby weight...
A friend told me about this Feta Turkey Meatloaf she saw on the Food Network by Giada and it sounded great so I checked it out!
It was easy and fantastic and the best thing "The Kids Will Eat It!"
It is now a staple in the household.

I have been craving cinnamon buns for a bit and decided to make some of my own and I thought I would share. I got the recipe here!
Recipe calls put put all ingredients in a bread machine just to rise but you don't have to do this. An alternative is just to knead your dough really well and place in the oven. Here some great tips on how to get dough to rise.
On a side note. I made my icing differently. I just used 1 cup of powered sugar and 6 Teaspoons of milk to make the icing. I was out of cream cheese and seemed a little lighter...as if it matters! *wink*

Don't forget your Black Eyed Peas & Collard Greens!

These two foods are a staples in our house and God forbid, we go without on New Years Day! *wink*wink* In the south you eat collard greens on NY's Day to bring you $$$$ for the upcoming year and black eyed peas for luck.
Collards are easy to make. Here's the run down.
Get your greens. Chop them about a square inch.
In a pot put about 2 tablespoons of olive oil, 1 tablespoon of sea salt and 4 to 5 strips of bacon. Saute the bacon until it is soft. Put in your greens and cover with water. Pour in about 1/2 cup of white distilled vinegar. Boil on high for about 10-15 minutes and then turn down to low. These need to cook slowly for about 2 plus hours...the slower and longer you cook them the better. Always make sure you have enough water ;)
Salt to taste and add more vinegar if you would like.
I usually make these with white rice, black eye peas, biscuits and fried chicken!

This chocolate chip apple pie is from my husband's step mother. She graciously gave me the recipe because it is my hubby's absolute FAVORITE thing to eat. I make it for him as a treat for the holidays. It is really easy and always a hit!
