My dear friend Cosette (Isn't that a cool name? Her mom named her after the little girl in Le Miserables) brought me awesome White Lasagna after CS was born and it was a life saver. Perfect to freeze and pull out on a night you don't want to cook...so I asked her to share and she so graciously did. Here it is...Yummy...oh P.S. Her darling helpers are her kids Chloe and Luke ;)

However, I do LOVE reading blogs and follow lots of discussion boards, etc. I guess you could say that I am your typical “lurker.”

Favorite “Food” moment/experience: Meeting world renowned French chef, Eric Ripert, in the kitchen at his famous restaurant, Le Bernardin, in NYC with my husband and fellow foodie friends, Ed and Ellyn.
Laura’s blog is fun and inspiring and when she asked me to post a recipe, I had to put on my thinking cap…. Do I go with something with a gourmet twist that tests culinary skills? Or, should I focus on a really yummy, gluten-free recipe for those who suffer as like me? Hmmm….Since it is a busy time of year and everyone enjoys a quick, go-to recipe, I decided to pull out one that is always a hit and is so easy you almost feel guilty receiving compliments (which is the best kind of recipe in my book!).
My mother has always been quite the gourmet cook so I learned to taste and try all sorts of things as a kid (whether I liked it or not!). I now thank her for “trying” to steer me away from the oreos and froot loops and introducing me to things like homemade hummus, brown rice, quinoa and organic produce/products. She was way ahead of her time. She also taught me that there is nothing wrong with quick, easy “crowd pleaser” recipes when entertaining. Although back to basics, healthy, from-scratch meals are awesome, I do love the simplicity of convenient recipes made in a flash. The key is to use good quality, the best you can find, ingredients.
Here is one that gets rave reviews and is super easy and a little bit decadent! My kids love helping with the “assembling” part. Years ago, I found the recipe in a Trader Joe’s newsletter.
White Lasagna
What You Need
12 Lasagna Noodles (in a pinch I use the No Boil Lasagna Noodles – they are great and less mushy)
1/2 cup of Freshly Grated Parmesan Cheese (make sure it’s fresh – makes all the difference!)
1 (16 oz) jar of Alfredo Sauce (your favorite brand – or make your own )
1 jar of Bolognese Meat Sauce (See above!)
1 lb of Uncooked Sweet Italian Chicken Sausage (or if you like spice use Sicilian – lots of flavor! The key is to experiment with your own tastes)
1. Pre-heat oven 350
2. 8x8 baking dish (I find glass works best)
3. Remove casings from sausage links; place sausage in large skillet and pan fry until done.
4. Add Bolognese sauce to pan; mix and warm through. Set aside.
5. Spread thin layer of Alfredo sauce on the bottom of 8x8 baking dish. Top with layer of noodles.
6. Spread thin layer of meat sauce on top of noodles, Top with a thin drizzle of Alfredo, evenly sprinkle on small amount of grated parm. cheese and top with another layer of noodles.
7. Keep layering in the same sequence until all ingredients have been used, making sure final layer is Alfredo sauce with the remainder of the Parmesan sprinkled evenly on top.
8. Place in the oven and bake for 45 minutes to one hour until the top is brown and bubbly and the edges are crispy.
This Serves 6!
I have doubled this recipe in a big pan for a large crowd and it turned out great.

Hi Lily's Laundry Followers - I had to post b/c I've known Cosette since the 3rd grade and am lucky to still have her friendship in my life (Love you Co!!). I can confirm all the amazing food her mom made growing up b/c I was the awkward red-head standing in their kitchen shoveling homemade granola, hummus, tamale's etc. into my freckly face. I can also confirm this recipe is delish! I recently made it for a daycare fundraiser/potluck and had several people ask for the recipe. Its worth it to splurge on the cheese and sauce choices. This is one meal you won't regret serving or eating!
